Toast Is A Great Breakfast!
Avocado toast is very trendy right now. But if you’re looking for a breakfast toast without avocado, you’ve come to the right place! Don’t get me wrong, I’m about as avocado obsessed as it gets, but when I’m not enjoying Avocado Toast, it’s fun to change things up a bit.
Namely…with this sweet breakfast toast that also happens to be a vegetarian breakfast toast — score! Toast makes such a great breakfast — it’s hearty, filling, and a great balance of macronutrients; there are carbs, protein, and healthy fats in this recipe. A good balance of macronutrients is important for balancing blood sugars and increasing satiety.
This idea is from my sister-in-law — during our annual family trip last summer, she made these for the whole family for breakfast one morning. Absolutely everyone went nuts for this combo — we couldn’t get enough! After coming home from the trip, I just kept making these. For breakfasts, for snacks — heck — I think we even had them for dinner once! While it’s less of a recipe per see, it’s toast inspiration and a great nutritious must-try breakfast this new year!
What’s Healthy To Put On Toast?
- Multi-grain bread: Use your favorite hearty bread. Prefer homemade? Try our White Bread or Honey Whole Wheat Bread!
- Peanut butter: we love Skippy® creamy peanut butter, but any type works here! You could even try chunky peanut butter for more crunch. If you don’t love peanut butter, use almond or cashew butter instead.
- Banana: Pick a fully ripe banana, but not an overripe one! Tips on selecting perfect bananas here.
- Blueberries: Choose dry, plump, and firm blueberries.
- Chia seeds: This superfood has become very popular lately because of the many health benefits it offers. Replace with poppy seeds if you prefer.
- Honey: A touch of sweetness is the perfect finishing touch and the best complement to the ingredients on this toast. Replace with agave nectar or pure maple syrup if preferred.
Quick Tip
This toast takes mere minutes to assemble, but it does need to be eaten quickly after being assembled. Otherwise, the bananas will start to brown and change texture, and the toast will become soggy. This isn’t a great recipe to make in advance.

Ingredients
- 1 slice whole-grain bread toasted
- 2 tablespoons creamy peanut butter or alternate nut butter
- 1/4 medium banana thinly sliced
- 1-1/2 tablespoons fresh blueberries
- 1 teaspoon honey
- 1/4 teaspoon chia seeds
Instructions
- Toast the bread to preference. Spread creamy peanut butter evenly over the top. Thinly slice the banana and assemble slices in an even layer over the peanut butter. Sprinkle on blueberries and gently press into the peanut butter, in the gaps between banana slices. Drizzle honey all over the toast and finish with a sprinkle of chia seeds. Enjoy promptly!
