- Red Pepper: Offers a sweet, mild flavor and a pop of color. An orange or yellow pepper can be used as a substitute.
- Green Onions: These deliver a mild bite and fresh flavor. Leave them out if you’re not a fan of onions, or if you’d like more bite, use a red onion.
- Carrots: Grating them on the large holes of a cheese grater ensures you don’t have big crunchy carrot bites throughout the salad. They add a nice mild sweetness.

- I like this salad best the same day it’s made, but it will stay good for 3-4 days in the fridge.
- Stir well before serving, adding extra dressing if needed. Pasta will continue to absorb surrounding liquid, so if the salad seems dry, it might just need more dressing.
- Make it ahead: Prep the pasta and chop the veggies in advance. Just mix with the dressing right before serving to keep everything fresh.

Ingredients
Salad
- 1 pkg (16 oz) rotini (or similar pasta)
- 3 cups cooked chicken, chopped small
- 1/2 cup thinly sliced celery (1 stalk)
- 1 red pepper, chopped
- 3/4 cup green onions, thinly sliced
- 1 cup grated carrots (grate on large holes of cheese grater)
Dressing
- 3/4 cup buffaloย sauce (Note 1)
- 3/4 cup good ranch dressing (Note 2)
- 1/4 cup mayo
- 3/4 teaspoon garlic powder
- 1/4 teaspoon pepper
Instructions
- DRESSING: In a medium-sized bowl, combine "dressing" ingredients. Whisk until combined. Place in the fridge to chill while preparing the rest of the salad.
- PASTA: Bring a large pot of 12 cups water to a rolling boil. Once boiling, add 1 tbsp salt and then pasta. Boil to package directions for "al dente." Drain, rinse under cold water (no longer than 20 seconds). Set aside to fully cool.
- ASSEMBLE: Place the cooled pasta in a large bowl. Add the chicken and prepared veggies. Stir in the dressing to preference (I add it all!) and toss to combine. Season with salt and pepper if needed.
- STORAGE: Best enjoyed on the day it is made. For advance prep, store components separately and assemble before serving.
