During hectic weeknights, especially in the midst of back-to-school chaos, who’s got the time to prepare a main dish, sides, and a salad from scratch? Typically, I’m not a fan of store-bought salad mixes, but with Caesar salad kits, it’s a different story—they’re legitimately delicious!

So, in today’s recipe, we’re using a Caesar salad mix, tossing in some chicken for a protein boost, adding avocado for a creamy texture and healthy fats, and tucking it all into a crispy toasted sub roll. The result? An easy, flavorsome dinner (or lunch) that’s sure to become a new favorite!

  • Hoagie/sub rolls: When it comes to bread, freshness is key. If possible, ensure the rolls are fresh from the bakery and soft.
  • Softened butter: Allowing the butter to reach room temperature will make it easier to spread on the rolls. If you’re in a hurry, you can soften it in the microwave; just be careful not to melt it.

Pre-cooked and seasoned chicken is a total time saver on its own, but to save even more time on the chicken, you can purchase rotisserie chicken meat already pulled from the bones and shredded or diced — a lot of grocery stores sell this conveniently prepared chicken!

Chicken Caesar Sandwich

This Chicken Caesar Sandwich is a tasty blend of creamy avocado, zesty Caesar salad, juicy chicken, and aromatic garlic, all in a warm, buttery roll.

Ingredients 
 

  • 3 white sub rolls
  • Butter softened
  • 1 (10-ounce) package Casear salad kit see note 1
  • 1 cup chopped rotisserie chicken see note 2
  • 1 large avocado thinly sliced
  • Mayo
  • Garlic powder

Instructions 

  • Pour the contents of the chopped Caesar salad kit into a large bowl. Add the chopped or shredded rotisserie chicken to the bowl. Using tongs, mix well until everything is well coated.
  • Brush the insides of the sub rolls with softened butter. Toast them in a toaster or a skillet until they are slightly crisp. After toasting, generously spread mayo over both sides of the sub rolls and lightly sprinkle with garlic powder.
  • Thinly slice the avocado and layer the slices onto the bottom half of each sub roll. Next, add a generous amount of the salad mixture, dividing it evenly between the sub rolls. Sandwich the top and bottom together and dig in!

Note 1: I prefer using a packaged chopped salad kit to ensure the lettuce pieces are conveniently small. If you can't find such a kit, simply spread the lettuce on a large cutting board and use a chef's knife to chop it into smaller bits. Also, if your salad kit doesn't include bacon, adding some to these sandwiches can bring an extra layer of flavor and crunch!
Note 2: Many grocery and warehouse stores offer hot-and-ready rotisserie chicken! However, for the quickest prep time, I suggest buying rotisserie chicken meat that has already been pulled from the bones and shredded. You can usually find this in the deli section of the grocery store. If you have some on hand, leftover baked chickenย orย grilled chickenย with a basic salt and pepper seasoning can also work well for this recipe.
Storage: Like most sandwiches, these subs won't store well. Keep the ingredients separate until you're ready to enjoy.
