This salad has quickly become a favorite. It’s hearty, full of texture, and perfect for fall. Brussels sprouts, dried cranberries, pumpkin seeds, and kale are seasonal staples in my home.

Ingredients

  • Kale, Broccoli Slaw, & Brussels Sprouts: Chopping the kale finely and shredding the Brussels sprouts helps them blend better with other ingredients and absorb the dressing.
  • Dried Cranberries: These add a chewy texture and a burst of tart sweetness that contrasts nicely with the greens.
  • Roasted and Salted Pepitas: These pumpkin seeds offer a salty crunch and add extra protein.
  • Dressing: Adjust sugar to taste. Stir in poppy seeds last for crunch. Store extra in the fridge for up to a week.

Costco Kale Salad Tips

  • Use a good mayonnaise for the dressing. After all, the better the mayo, the better the dressing will taste. I love Hellman’s/Best Foods® (not sponsored) since it has a rich flavor without being overly sweet or tangy. It really is the best mayo for this dressing!
  • While I think this poppy seed dressing recipe is the absolute best and highly recommend trying it (I promise, it’s so easy to make!) you can use store-bought dressing in a pinch. My personal favorite is Brianna’s® poppyseed dressing® (not sponsored).
  • Add in some grilled chicken and call this Costco Kale Salad a meal! I love this grilled chicken marinade recipe.

What Are Pepitas?

Roasted pepitas add a sweet, nutty crunch to Costco Kale Salad. You can buy them roasted and salted in the bulk section or with salad toppings.

Broccoli slaw is a mix of shredded broccoli, carrots, and red cabbage, usually found near packaged salads. If unavailable, thinly slice broccoli florets, grate the stems, and add to the Costco Kale Salad!

Servings: 4 servings, as a side

Ingredients 
 

  • 4 cups finely chopped kale
  • 2 cups broccoli slaw
  • 2 cups thinly sliced (shredded) Brussels sprouts
  • 3/4 cup dried unsweetened cranberries
  • 1/2 cup roasted and salted pepitas

Dressing

  • 1/4 cup low-fat Milk
  • 1/3 cup reduced-fat mayo
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon grated lemon zest
  • 2 tablespoons white granulated sugar
  • Salt and pepper
  • 1/2 tablespoon poppy seeds

Instructions 

  • Combine all of the ingredients, except the poppy seeds, in a small blender jar and process until combined. (Season to taste with salt and pepper; I add 1/4 teaspoon fine sea salt and 1/8 teaspoon pepper.) Taste and adjust any flavors to personal preference. (If you'd like a sweeter dressing, add an additional 1-2 tablespoons white sugar.) Stir in the poppy seeds. Store in an airtight container in the fridge until ready to serve (Dressing stays good for 1 week stored this way).
  • Combine the chopped kale, broccoli slaw, thinly sliced Brussels sprouts, and broccoli slaw in a large salad bowl. Pour 1/2 of the dressing over the salad greens. Toss the greens with tongs to coat in the dressing. Sprinkle the cranberries and pepitas over the salad. Lightly toss to combine and then add the rest of the dressing and toss.
