Easy And Delicious No Bake Granola

Years ago, after a failed batch of granola bars, I kept the crumbly mix in a bag—I wasn’t about to waste those ingredients!

Turns out, it was too good to resist. Everyone kept grabbing handfuls, and I started sprinkling it over yogurt and smoothie bowls.

And that’s how no-bake granola became a staple in my home. It may not be crunchy like traditional granola, but I still make it all the time. It’s easy, delicious, and seriously crave-worthy!

But WHY No Bake Granola?

  1. First, it’s fast—ready in 10 mins or less.
  2. Second, it’s easy. Regular granola isn’t hard, but baking takes time, plus the wait for it to cool.
  3. Third, it’s unique. Same ingredients as regular granola, but a different texture, making it a fun snack.
  4. And fourth, it’s perfect for hot days—no oven needed, no extra heat in the kitchen!

Ingredients

  • Creamy peanut butter: Pick one you like eating by the spoonful—slow-roasted and lightly salted adds great flavor.
  • Honey: Sweetens the granola. Use maple syrup or agave instead if you want.
  • Vanilla & salt: Make it taste even better.
  • Old-fashioned oats: Works best; steel-cut oats are too tough, and quick oats get too soft.
  • Rice Krispies® cereal: Makes it crispy.
  • Oat flour: Blended oats (see “quick tip” box). Try flaxseed or hemp hearts instead.

Quick Tip

Oat flour is simply blended oats—super simple! If you have oats, you’re good to go.

No-Bake Granola Mix-Ins

Along with the main ingredients, add ¾ cup of any mix-ins you like!

  • Roasted pistachios (or any nut you like)
  • Dried cherries or blueberries
  • Crispy coconut flakes
  • Mini M&M’s®
  • Reese’s Pieces® or Heath® bits
  • Crunchy pumpkin seeds (pepitas)
  • Raisins or yogurt-covered raisins

Storage

Store extra no bake granola in a sealed container at room temp for up to a week or in the fridge to keep it fresh longer.

No-Bake Granola is the ultimate quick snack—ready in 15 minutes, no oven required! Customize it with your favorite mix-ins like chocolate chips, coconut flakes, or dried cranberries.

Equipment

  • Microwave-safe bowl

Ingredients

  • 1/2 cup creamy peanut butter
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 cup old-fashioned oats
  • 1/4 cup oat flour blend regular oats in a blender—see note 1
  • 1/4 cup Rice Krispies cereal
  • 3/4 cup mix-ins of choice I use 1/4 cup slivered almonds, 1/4 cup dried cranberries, and 1/4 cup chocolate chips

Instructions 

  • In a small, microwave-safe bowl, combine the peanut butter and honey. Microwave for 30 seconds, then stir until smooth.
  • Add in all the other ingredients except the mix-ins. Mix until combined. It’s thick and messy at first, but just keep stirring until a good consistency is formed. You may need to lightly knead the mixture with your hands and then crumble to form granola crumbles.
  • Add in any mix-ins of choice and stir through, then crumble the granola.

Note 1: Oat flour is just regular oats that you blend or put in a food processor and pulse until they are a flour consistency. Measure the oat flour after blending.
