Easy Sparkling Blueberry Lemonade

Cool down with this sparkling blueberry lemonadeโ€”a refreshing, easy-to-make drink thatโ€™s bursting with fresh, juicy blueberries and bright lemon flavor.
Prep Time: 10 minutes
Total Time: 10 minutes
Servings: 1 large pitcher, about 6 to 8 cups

Equipment

  • Medium pot

Ingredients 
 

  • 2/3 cup sugar superfine is best
  • 2/3 cup water
  • 1-1/2 cups fresh blueberries
  • 4 to 5 large lemons
  • 2 cups ice cubes
  • 3 cups sparkling water or club soda, my favorite is sparkling lemon lime water

Instructions 

  • Combine the sugar, water, blueberries, and 1 teaspoon lemon zest in a medium pot.
  • Bring to a boil over medium heat, then simmer for 10 minutes or until the sugar is melted and blueberries are starting to burst.
  • Remove from heat and pass through a fine sieve. Let this blueberry syrup completely cool.
  • Meanwhile, juice the lemons to get 1 cup lemon juice.
  • In a large pitcher, add the blueberry syrup, lemon juice, and ice. Stir together.
  • Stir in the sparkling water or club soda right before enjoying (donโ€™t add to anything you plan on having leftover). Enjoy immediately.

Storage: If you donโ€™t plan on drinking this in 1 day, keep the juice (blueberry syrup + lemon juice) separate from the sparkling water. Add them together to serve.

    I am thinking about using this for a program that we do with girls in the summer, but I need to make it without sugar for a diabetic staff member. Can you use splenda or truvia instead of sugar?

      I’m sure you could! I haven’t tried alternative sweeteners, but if you scale it down based on the ratio of artificial sweetener to sugar, it should work great!

    This looks so good! But because of where I live, I can’t buy fresh blueberries without paying a fortune, if we get any at all. Do you think this would work using frozen blueberries?

      I’m sorry; I’ve never tried frozen blueberries so I can’t say for sure! I don’t see why they wouldn’t work though!
