This Blue Cheese Dressing is creamy, tangy, and delicious! Made with crumbled blue cheese, buttermilk, and mayo, it’s easy to customize and it's perfect in a salad or as a party dip!
Measure 1/3 cup of blue cheese by packing it tightly in a measuring cup. Add to a medium-sized bowl. Mash the blue cheese and buttermilk together with a fork until it resembles large-curd cottage cheese.
Add in remaining ingredients. If desired, add in fresh minced chives. Stir until well combined. Taste and adjust to personal preference. Cover dressing and refrigerate until ready to use. Stir again before using. To create a smooth dressing, you can also blend everything except the chives together. Stir through chives after blending.

Note 1: Blue cheese is the key ingredient that gives the dressing its signature flavor. Look for a high-quality, crumbly blue cheese such as Roquefort, Gorgonzola, or Stilton.STORAGE: Blue Cheese Dressing can be stored in an airtight container in the refrigerator for up to one week. Stir the dressing before using it again, as the ingredients can separate over time. If you find that the dressing has become too thick, you can add a little bit of buttermilk to thin it out again. If it's too thin, simply mix in a little bit more crumbled blue cheese or mayo.
