Blueberry Energy Bites are a delicious mix of coconut flakes, oats, roasted almond butter, chocolate chunks, and dried blueberries. Naturally sweetened with honey and flavored with vanilla and cinnamon, they’re a tasty treat!
Add the oats and coconut to a large food processor. Pulse for 30–60 seconds or until fairly ground up.
Add in the almond butter, honey, vanilla, salt, and cinnamon, and dark chocolate chips. Pulse mixture again until ingredients are finely chopped and well incorporated. Finally, add in the blueberries and pulse until blueberries are incorporated in the mixture. If the mixture is too dry and crumbly, add more almond butter or honey. If it is too wet, add more oats and re-pulse.
Use a 1-tablespoon measuring spoon or 1-1/2 tablespoon cookie scoop to portion out the mixture and then tightly roll into balls. Once rolled, place in the fridge to firm up and then transfer to an airtight container.

Note 1: I recommend a slow-roasted and lightly salted almond butter. If it’s not a tasty almond butter on its own, these blueberry energy bites will lack flavor.Note2: Salt: Depending on the almond butter used, you may want to adjust how much salt you add. Check the saltiness of your butter and adjust accordingly. If you use table salt instead of fine seas salt, you'll want to use 1/4 teaspoon or less.Storage: Store these energy bites in the fridge for 1–2 weeks or freeze them for up to 6 months. To freeze, place them on a lined tray until firm, then transfer to an airtight bag or container. Thaw for 15–30 minutes or microwave for 10–15 seconds; they're also tasty slightly frozen!
