After making this homemade granola recipe, you’ll never want to go back to store bought! It’s packed with flavor, made with good-for-you ingredients, and SO easy to make.
Preheat oven to 300°F (150°C) and line a rimmed sheet pan with parchment paper.
In a small pot, add the maple syrup, olive oil, brown sugar, and salt. Heat over medium-low, stirring until the sugar is dissolved and the mixture is smooth.
In a large bowl, add oats, pistachios, almonds, coconut flakes, pepitas, and vanilla extract.
Pour the sugar mixture over the dry ingredients, gently stirring until everything is evenly coated.
Spread the mixture on the prepared sheet pan in a single layer. Bake for 35–40 minutes, stirring every 15 minutes, until the granola is dry and golden brown.
Let the granola cool completely. Stir in the dried cranberries, then transfer to an airtight container. Enjoy!
