Get ready for the ultimate snack: White Chocolate Chex Mix! Crunchy cereal, salty pretzels, roasted peanuts, and sweet M&M’s—all with a white chocolate coating.
Line a large sheet pan with parchment paper; set aside.
In a very large bowl, combine Chex, Captain Crunch, Cheerios, miniature pretzels, peanuts, and M&M’s. Stir together gently.
In a medium bowl, add white chocolate chips and vegetable oil. Microwave for 30 seconds, stir, and microwave another 25 seconds. Stir until melted and smooth. If needed, return to the microwave a little longer in bursts of 10 seconds, stirring for 10 seconds between each burst.
Pour melted white chocolate over snack mix, using a spatula to scrape all melted chocolate into the mix. Working quickly, gently stir until cereal mix is well coated, then transfer to the prepared sheet pan and spread into an even layer.
Allow to harden at room temperature or place in the fridge until firm, about 10–20 minutes. Break into pieces and serve.

Note 1: The better the quality of the white chocolate chips, the better the melt and the better the flavor. Ghirardelli white chocolate is my favorite here.Storage: Store in an airtight container at room temperature for up to a week. I like it best within 3–4 days.
